Our locally sourced menu features made-that- morning breads and pastries, yogurt, fruit, meats, and cheeses. Enjoy with a freshly roasted coffee or tea.

Matt DeMille grew up in rural Ontario, surrounded by a bounty of locally grown food, before farm-to-table was cool.

 

Inspired by his French Canadian roots and the comfort food that filled his childhood memories, he completed Chef Training at George Brown College in Toronto and was hooked on the big city and it’s dining scene.

 

Matt honed in on his awareness of local food and wine with the Oliver Bonicini Group, and has since continued that culinary journey with time spent at renowned restaurants such as LeSelect Bistro, Enoteca Sociale, and Parts & Labour. Not only did he grow creatively, but he embraced his love for Canadian-inspired comfort food.

 

With his small family in tow, Matt eventually made the move to the Bay of Quinte region. Here, he opened the critically acclaimed restaurant at the Drake Devonshire, and launched his successful catering and restaurant consultation company - where he has thoughtfully crafted the modern, delicious menu here at The Belvedere Hotel.
